Sardines Recipe for Lent by Mega Creations Premium Sardines

In a predominantly Catholic country such as the Philippines, Good Friday symbolizes the commemoration of the death of Jesus Christ on the cross. Aside from the prohibition of taking a bath after 3pm, one other observed tradition is the abstinence of eating meat. And so, I found this sardines recipe from Mega Creations Premium Sardines (from the creators of Mega Sardines) a fitting post today. 🙂

A few weeks ago, Mega Creations Premium Sardines, together with Global Academy Head of Operations Chef Greg Villalon, demonstrated that tasty meals can be easily prepared even using common household ingredients in less than half an hour.

The sardines come in two variants: in natural oil and in spanish style. One of the dishes / recipes cooked with a twist was the Moroccan Sardine and Sweet Potato Casserole. It was my favorite and deserves a feature here:

Moroccan Sardine and Sweet Potato Casserole Recipe:

Ingredients

  • 6 Cans – Mega Creations Premium Sardines Spanish Style (chopped)
  • 2 Cups – Spinach leaves (chopped)
  • 2 Cups – Red Bell pepper (strips)
  • 1/2 Cup – Raisins
  • 1 Cup – White onion (minced)
  • 2 Tbsp – Cinnamon powder
  • 2 Tbsp – Cumin powder
  • 1 Tbsp – Turmeric powder
  • 6 Tbsp – Tomato paste
  • 1/2 Cup – Olive oil
  • To taste – Salt
  • To taste – White pepper

Sweet Potato Mash

  • 1 Kilo – Orange sweet potato (peeled and cubed)
  • 2 Cups – Milk
  • 6 Tbsp – Butter (softened)
  • To taste – Salt
  • To taste – White Pepper

Cheese Crust

  • 1 Cup – Cheddar cheese (grated)
  • 1 Cup – Japanese bread crumbs
  • As needed – Butter

Procedure:

  1. Peel, chop, and boil sweet potatoes until soft enough for a knife to go through it. Drain off the sweet potatoes before mashing with a fork.
  2. Place mashed sweet potatoes in a pan, then incorporate milk and softened butter until desired consistency is achieved. Season to taste then set aside.
  3. Heat olive oil in a sauté pan then add onions, peppers, spinach, and raisins. Briefly saute, then add all the spices and leave in the pan until fragrant.
  4. Add the potato paste and stir well. Next, add the Mega Creations Premium Sardines and mash thoroughly until a “spreadable texture” is achieved. Season to taste, then set aside.
  5. Assemble the dish on a casserole or a Pyrex dish. The ingredients will be layered similar to a lasagna dish, with the first layer made of sweet potato puree, and then topped with the spinach mixture. Repeat the process until you fill the casserole.
  6. Sprinkle the cheese crust on top then add slices of butter to cover the whole dish.
  7. Bake in a 375° F oven for about 30-45 mins or until the crust has browned.
  8. Serve and enjoy!

In a recent interview with the contestants of the MasterChef Pinoy edition, most of the participants agree that spaghetti is the number 1 food choice of Filipinos for Christmas. and I think it is true to my observation.

However, it doesn’t mean we will just settle with comfort food. We can always up the ante of our meals specially during Noche Buena (Christmas Eve feast) which is a special occasion for us Filipinos. One suggestion is the well-loved Filipino dish called Sinigang (Tamarind Soup).

In fact, we just had Sinigang na Tilapia for lunch earlier which my mom prepared using Knorr Sinigang sa Sampalok Mix. She prepared a lot so I know we’ll be seeing it again later for Noche Buena. 🙂

A steaming serving of the tamarind-base soup is enough to warm the heart and tummy especially during the cool evenings. Mom put in the traditional mix of tomatoes, kangkong, onion, pepper, and radish. The play of flavors found in a warm pot of Sinigang brings back fond memories with the family.

And to make the preparation less taxing, Knorr Sinigang is on hand to bring out the rich sinigang flavor in a convenient way. It is made from real sampalok and available in convenient sachet packs. It can also be mixed with pork or seafood together with gabi and other vegetables.

Similarly, Chef Marvin Agustin makes sure that he goes the extra mile to offer something different yet definitely familiar to the Filipino palate. He uses leftover lechon as the main ingredient in making his classic sinigang.

“Everyone loves sinigang. We all grew up with it, and with a little creativity and a little help from Knorr Sinigang, you can have a winning dish for the holiday season,” Marvin concludes.

May 31, 2012 – It was a rainy afternoon when I went to Romulo Cafe in Makati City to meet the Knorr Chef Ambassadors. A cooking demo was conducted by the Filipino top-chefs who spilled out their expertise in making traditional Filipino dishes more innovative and modern.

The chefs, with the help of Knorr products help Filipinos to create special dishes that will go extra mile for their families. It was nice to know that all the recipes in the cooking demo can be easily cooked at home, making our usual “ulam” very special and more exciting.

Knorr became very mindful in choosing their partners in product and recipe development. And they just had found these individuals who have passion for good and healthy food, coupled with an uncompromising commitment to excellence in what they do.

The roster of Knorr’s chef ambassadors were Chefs Marvin Agustin, Tristan Encarnacion, Martin Jackain and Dianne dela Cruz, with the newest addition to Knorr’s list of chef-ambassadors – Joseph Patrick Anglo. He was one of the judges in the recent Junior Master Chef Philippines. Together, they are able to create unforgettable recipes that highlight what Knorr products can do for every dish.

The chefs prepared their signature recipes with the help of Knorr productsto bring out the best on each dish.

Chef Marvin shared his expertise in cooking with his Pinakbet ni Marvin. Chef Marvin made the traditional pinakbet special by topping it with lechon kawali/liempo, making a balanced combination of meat and vegetables.  The flavors of vegetables accentuated with shrimp paste became more brilliant after adding with Knorr Shrimp Cube. Most of the recipes are easily accessible making it really easy to do.

Another celebrity chef made his way on making a remix of the Sinigang and Bulalo recipe. Chef Tristan combined these two Filipino dishes in Sinigang na Bulalo. Sinigang and Bulalo are two of my favorite Filipino soups and I never thought I can have them in a single dish. The sour flavors of tamarind using the Knorr 2-in1 Sinigang sa Sampalok Mix neutralized the fatty taste of the broth.

Chef Dianne also made fish recipes delicious by teaching us on how to make a mouth-watering Escabeche recipe, a Filipino style of sweet and sour combining vinegar and sugar and blends the taste of ginger that makes it one of the favorite dishes of the Filipino families. Chef Dianne added Knorr Fish Broth Cube to enhance the flavor of Lapu-lapu and make it tastier that usual.

Chef Martin also showcased his mastery in cooking by preparing Organic Sagada Rice Paella With Seafoods, a rice dish full with exciting flavors of different seasonings and topped with the mixed flavors or the ocean. Aside from the different seafoods, this dish tasted perfect because Chef Martin used organic Sagada rice. His secret ingredients are the Knorr Chicken Cube and the Knorr Shrimp Cube.

Chef Jayps prepared his own version of ginataang kalabasa and made it more special with the help of Knorr Ginatang Mix, Knorr Chicken Cubes and Knorr Sinigang Mix. He upgraded it into Lechon Kawali with Rosted Pumpkin Gata. Everyone is familiar with this recipe but who would have thought of putting lechon kawali on it and making it a memorable recipe? Oh well, I just love the combination of the crispiness of lechon kawali and the creaminess of the coconut milk.

Recipe: Sinigang na Bulalo

NomNom Club was recently invited to Knorr’s Chef Ambassador media event in Makati. But before we reveal what happened in that gathering, allow us to share with you one of the featured recipe from Knorr.

Sinigang na Bulalo

Ingredients:

  • 350g-400g Beef bone in shank with meat
  • 2 tbsps Cooking oil
  • 1/4cup White onions, diced
  • Waters as needed
  • 1 pack Knorr 2-in1 sinigang sa sampalok mix
  • 4pcs Siling pangsigang
  • ½ tbsps. Calamansi juice
  • 2 tbsps Achuete
  • Fish sauce to taste
  • Salt and freshly ground black pepper to taste
  • ½ cup Fresh and green cabbage leaves, washed
  • Red and green seedless grapes for garnish

Procedure:

  1. Season beef with salt and pepper and sear both side in a casserole or pot with hot oil
  2. Remove seared beef and set it aside
  3. Using the same pot, sauté onions, pour water and return seared beef into the casserole
  4. Bring to a boil and simmer until beef is tender. Add water if needed
  5. Add Knorr 2-in1 sinigang mix
  6. Add siling pangsigang and calamansi juice
  7. Using a strainer with the achuete, ladle broth onto the strainer until broth turns into orange. Discard used achuete
  8. Season with fish sauce and pepper
  9. Add cabbage leaves and simmer for a minute or two
  10. Garnish with seedless grapes and serve.

Sarap at Home Opens A New Season of Canned Goodness
