I was excitedly anticipating the Food Styling 101Â seminar for the media I attended 2 weekends ago at CCA Podium in Ortigas. It was my first to be in a food styling class.

As a food blogger who often takes photos of what I eat, styling food and angling my shots has always been a challenge as the thought process involved in presenting a dish sets the first impression and somehow tease the readers into wanting them.
Our lecturer was no less than renowned chef and food stylist Chef Eugene Raymundo. He has worked with several big brands for print and TV including Red Ribbon, KFC, and Nestle Ice Cream, to name a few. He is also currently associated with Five Cows Resto and Ice Cream Bar in Trinoma and Kitch’ Cafe, among others.
He started with defining what food styling is and proceeded with the goals and what it takes to be a food stylist.

Chef Raymundo shared that food styling is not just about making the food attractive in the way it is put together, it is an art that requires skill and knowledge.
He surmised that one should at least have some basic knowledge about cooking so you would understand more about the dynamics of food.

In the latter part of the afternoon, we proceeded with the actual styling and the tools of the trade. We were exposed to propping, and using mock-up ice creams, syrups and flans.
Nonetheless, Chef Eugene Raymundo encouraged the use of actual products in foodstyling as much as possible. In the case of ice creams, it is highly understandable why using the real ones would be impractical. It would have already melted even before the cameras are rolling. 🙂

Artificial Ice Cream
Center for Culinary Arts Podium recognizes this increasing interest and delivers a project that focuses on teaching food styling as well as food photography. Through the Continuing Education Programs, they welcome individuals interested or passionate to learn about food styling and techniques in food photography. Taught by a top notch food stylist and noted food photographer, participants of the course will acquire skills in preparing food for editorial materials. The course aims to develop the participants’ style, creativity, and ingenuity particularly in food styling.
So if you want to learn how to creatively style food and photography, you may get in touch with CCA Podium Culinary School Market Café at the 5th floor of The Podium along ADB Avenue in Ortigas Center, Pasig City. Red Ribbon came up with another new cake going to the end of the third quarter – the Choco Fudge Cake!
Choco Fudge Cake
I got to taste it for the first time a week or two ago at a colleague’s birthday celebration. Being familiar with Red Ribbon cakes, I knew it was a new cake. 🙂 I tried it with anticipation and I was not disappointed. It was so chocolaty from top to bottom and from side to side being smothered and literally covered with chocolate icing!
I say it’s a chocolate cake for the real chocolate lover. It’s a leveled-up classic chocolate cake with layers of moist chocolate pound cake and chocolate fudge filling inside. Be cautious though that the more conservative cake consumer might find it too chocolaty or too sweet.
Priced a little lower than its predecessor – the Chocolate Heaven, the Choco Fudge Cake is a perfect gift for your chocolate-loving friend or those with a sweet tooth; but might not be so for those on the ‘sugar guard‘. The regular size costs P460 and junior size is only P275.
Moreover, you could have the Choco Fudge Cake served warm or cold. Try it warm for a change! 🙂 It comes perfect with a hot cup of brewed coffee as well.
Crispy Chicken by Red Ribbon
Interestingly that same night, I came across one of Red Ribbon’s newest meal – the Crispy Chicken. To say it plain and straight – I loved it! I’m not really a fan of chicken skin, but if it is this good and crispy, I’ll take it. 🙂
It was good mix of chicken meat and crispy skin with new twist to barbecue sauce – the mango barbecue sauce. A full order is P150 and P90 ala carte.

I finished the chicken before I remembered I haven’t taken a photo of it. 🙂 So make do with my small photo of the menu board at Red Ribbon’s new and spacious branch at Fort Bonifacio in between Jollibee and Chowking along Rizal Street.

I celebrated my personal birthday a few weeks ago and a Jollibee cake made by Red Ribbon found its way into our home.:)
It was a big fondant chocolate cake with a big and cheerful printed Jollibee mascot on top. A fitting cake for a day of merriment.

Chef Laudico
However, I was further surprised when I came home to our QC house last Sunday (two days ago) and found a Chef Laudico brownies box in our refrigerator. It was accompanied by a birthday greeting card saying:
“Happy Birthday. Hope you’ll enjoy this box of brownies especially and exclusively prepared by Chef Jackie Laudico…“
Wow, that sounds special, albeit belatedly.:)
I opened the box and found a set of ten elongated brownies. Something different from the usual square ones we see. And indeed, the taste was exquisitely premium. More than just the average brownie, it was a luscious mixture of the brownie; plus the roasted nuts caramelized cashew on top. I can’t exactly distinguish what kind of nut but it’s most probably cashew.

It was so good. This is one of the best brownies I’ve had. I think this due to the good chocolate mixture highlighted by the crunchy and premium-tasting roasted walnuts caramelized cashew on top. Yum!
Birthday Card
I searched the Net including Chef Laudico website (http://www.cheflaudico.com.ph/) but didn’t find the brownies, not even its name.
And lastly, the card indicated:
“We have made a donation under your name to the Virlanie Foundation and the Autism Society of the Philippines.”
