I’m not a morning person, you can even ask my wife about it; and so is she! Waking up at 8am is a chore and the alarms of our smartphones will agree. 🙂

This eventually leads to late and hectic mornings, and sometimes, even missing breakfasts.

Although I’m on home-office for most of the week, I teach at a local college every Mondays and Fridays. Needless to say, I’m almost always late for about 30 minutes in school, although it’s just at a nearby village. As a teacher, it’s a bit embarrassing for your student to be ahead of you in coming to school. 🙂

So our breakfast meals are usually American-style composed of loaf bread and spreads.

But my wife is good in the kitchen, she can be creative with our breakfasts from time to time. She can whip up great-tasting sandwiches in a jiffy, that are healthy at the same time fit for our busy and on-the-go lifestyle.

Let me share with you one of the secret sandwich recipes she invented:

Sandwich Recipe w/ San Marino Tuna Flakes

San Marino Tuna Flakes Sandwich Recipe

Ingredients:

Home-made Tuna Spread

Home-made mixed Tuna Spread

  • New San Marino Tuna Flakes in easy-open can
  • Gardenia Loaf Bread
  • Boiled Egg Slices
  • Onions
  • Cucumber
  • Lettuce
  • Tomatoes
  • Pepper
  • Shredded Pork Floss
  • Chopped Nuts

Procedure:

  1. Boil egg for 8 to 10 minutes.
  2. Drain and cool in a bowl of cold water, peel, and thinly slice.
  3. Combine the tuna flakes and chopped onion with a dash of pepper.
  4. Place the bread slice on a plate and spread the home-made tuna spread
  5. Top with sliced tomato, boiled egg slices, lettuce, and finally a thin layer of shredded pork floss
  6. Wrap your creation in a sandwich bag and you’re ready to go!

Add toasted Pork Floss for the extra crunch and texture

Alternatively, you can substitute the loaf slices with tortilla wraps for variety. You can also extra-toast the pork floss for the extra crunch in every bite. Shredded pork floss are a delicacy among our Chinoy friends. They are readily available in Binondo Chinese food stalls.
